What about a really nice warming healthy soup?

I just happened to go through my freezer the other day and discovered I had some frozen veggies.  As I pulled them out of the freezer I thought, ‘what am I going to do with them?’ Then I had a memory flashback of somebody recommending some nice stews for a cold winter day and I thought I could make a soup. I pulled out one of my cookbooks and there was a recipe for a healthy winter soup. It suggested I could use whatever veggies I had.

The portions don’t really matter use as much or as little as you like depending on how many you need it for, or if you want some for a couple of days.

I chopped up some onions, fresh garlic and capsicum and put in pot with coconut oil. Stirred until onion got slightly brown and added curry powder (according to taste). Stirred for a few seconds until mixed with everything. Added water, 1 cup quinoa and rest of chopped up veggies which included carrots, sweet potato, celery, one beetroot. Also added some thyme and turmeric, a little tomato paste for extra taste and some sea salt. Brought to boil and simmered for 20 minutes.

You can mix and match these ingredients to suit your tastes. This ended up being a nice tasty warm soup for a cold morning and made a difference to the whole day.  Any left over’s you can put in the fridge and heat up whenever you feel like it.

If you want it to be really healthy you can use organic ingredients.
