Chia seed pudding recipe


Buy some organic chia seed from your health food store or even some of the supermarkets like Woolworths has organic chia seeds.

Get a glass container. I prefer to use something with a lid. Add ¼ cup of chia seed. Chia seeds expands when you add liquid by about 9 times. Add two and a half cups of water together with coconut milk. The water/coconut milk ratio depends on how creamy you would like your pudding to be. The creamier you want it the more coconut milk needed.

Add some healthy sweeteners like honey, agave syrup or stevia. This depends on how sweet you like it and what kind of sweet flavour you prefer. You may notice that I do not use any kind of sugar. You can achieve a beautiful and very healthy sweet taste without having to use sugar.

Add some desiccated coconut and some cacao if you like a chocolate taste. If you like you can add some vanilla essence. Mix the ingredients together, cover it, put it into the fridge and let it sit for a few hours or overnight. The longer you leave it the thicker it becomes.

If you prefer to add some blueberries or other fruits and top it with a touch of cinnamon.

You may notice that this recipe is very flexible, and you can create the pudding that you favour the most.

You can make up several smaller portions keeping in mind that the chia pudding stays fresh for about three to for days in the fridge. If you have a few smaller portions, later you can go and grab some when you feel like eating it. It is a lovely, very healthy, healing desert.
